Orange Cake with Strawberry Icing
Preheat oven to 350F. Grease one loaf pan and line with parchment paper so that two flaps hang over the edges.
Zest the orange, and squeeze out the juice into a small bowl.
Cream the butter and sugar. Add eggs one at a time, mixing well after each addition. (I think this exact sentence is in about every dessert recipe ever in existence.) Add the orange zest.
Mix the dry ingredients. In a separate bowl, mix the cream, vanilla and 2 tbsp of the freshly squeezed orange juice.
Add the flour and cream to the butter, alternating between each. Mix well.
Pour into the loaf pan and smooth surface over with a knife.
Bake for 40-45 minutes or until toothpick inserted in center comes out clean.
Let cake cool for 10 minutes, then poke the shit out of it with a toothpick. Spoon the remaining orange juice over the cake.
Let cool completely, then prepare the icing. Mix together the icing sugar, cream and strawberries. Drizzle over cake.
You can add strawberries to the cake if you think ahead, which I don’t.
